INSTRUCTIONS:

1 cup (240 ml) butter (use alternative for med diet)

1/2 cup (120 ml) packed brown sugar

1 teaspoon vanilla extract

3 cups (720 ml) rolled oats

1 cup (240 ml) semi-sweet chocolate chips

1/2 cup (120 ml) peanut butter

INSTRUCTIONS:

1. Prepare the Pan: Line a 9×9 inch (23×23 cm) baking pan with parchment paper or lightly grease it. This will make it easier to remove the bars once they are set.

2. Melt Butter and Sugar: In a medium saucepan over medium heat, melt the butter. Add the brown sugar and vanilla extract, stirring constantly until the mixture is smooth and the sugar has dissolved.

3. Add Oats: Stir in the oats until they are fully coated with the butter-sugar mixture. Cook the mixture for 3-4 minutes, stirring constantly to prevent the oats from sticking to the pan and to ensure they are evenly cooked.

4. Create the Bottom Layer: Press half of the oat mixture firmly into the bottom of the prepared pan to create an even layer.

5. Prepare the Chocolate Layer: In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring after each, until the mixture is fully melted and smooth.

6. Assemble the Bars: Pour the chocolate-peanut butter mixture over the oat layer in the pan, spreading it evenly with a spatula. Then, crumble the remaining oat mixture on top, pressing it gently to form the top layer.

7. Chill: Cover the pan with plastic wrap or foil and refrigerate for at least 2-3 hours, or until the bars are fully set and firm.

8. Cut and Serve: Once the bars are set, lift them out of the pan using the parchment paper. Cut into squares or bars of your desired size.

9. Store: Store the bars in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.

Notes:

Oats: Rolled oats work best for this recipe, as they provide a chewy texture. Quick oats can be used, but the texture will be slightly different.

Butter: Unsalted butter is preferred, but if using salted butter, you may want to reduce the added salt in the recipe.

Peanut Butter: Creamy peanut butter works best, but you can use crunchy if you prefer a bit of texture.

Chocolate Chips: You can use dark chocolate chips for a richer flavor or milk chocolate chips for a sweeter taste.

Add-ins: Feel free to customize the bars with add-ins like chopped nuts, dried fruits, or coconut flakes.

Vegan Option: To make these bars vegan, use a plant-based butter substitute, vegan chocolate chips, and a nut or seed butter of your choice.
