1. Tortilla

Ingredients:

  • 3 cups all purpose flour
  • 1 tsp salt
  • ¾ cup warm water
  • 3 tbsp olive oil or butter
  • 1 tsp baking powder (optional)

Recipe:

Into a mixing bowl, add in the flour, baking powder ( for a slight puffy, pillowy texture) and salt. Mix really well. Then, little by little keep adding in the water and oil and knead until the dough forms a dough ball.

Then, separate the dough into 8 to 10 equal parts. Roll into balls and set aside for 15 mins. Flatten each ball into a circle and In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, about 1 minute on each side. Serve warm.

Ingredients:

  • 1 cup wheat flour
  • 1/4 – 1/3 cup water ( may vary depending on the quality of flour)
  • 1/4 tsp salt
  • 2 tsp oil or ghee
  • 1-2 tsp semolina ( optional, but recommended for puffed pooris)
  • Oil for deep frying

Recipe:

Into a mixing bowl, add in the flour, semolina, salt, ghee and mix well. Add in the water little by little, knead well until it forms a dough ball. Then make it small sized balls and flatten into round circles. Take a deep saucepan and add oil to it.
Heat the oil on medium flame and gently place one puri into the hot oil. Deep fry until golden brown on both sides and they’re ready to eat.

3. Rotichapati

Ingredients:

  • 2 cups wheat flour
  • warm water (as required)
  • Salt (optional)
  • 1 tbsp Oil (optional)

Recipe:

Into a mixing bowl, add in the flour, salt, oil or ghee and add the water little by little, knead well until it forms a dough ball. Then make it into small sized balls and set aside for 10 mins, flatten into round circles. Heat a pan and drizzle some oil on it. You can also fry the chapati on dry pan and then add in the oil/butter after you finish frying it. Gently transfer the roti to the hot pan and start frying on both the sides.

Ingredients:

  • 1 cup warm water
  • 2 tsp active dry yeast
  • ½ tsp sugar
  • 3 cups flour or whole wheat flour

Recipe:

Into a bowl, add in the warm water and sugar, let the sugar dissolve. Sprinkle the yeast over the water and leave it to sit for 10 minutes or until it starts to froth up. Then into a mixing bowl, add in the flour and salt. Mix and make a dent in the center and add in the activated yeast mixture and oil.

Mix it all well and knead until properly combined and the dough forms a dough ball. Then grease a bowl with some oil and place the dough in it and cover with a cloth. Leave it for 2 hours to sit until it rises to double its size.

5. Naan

Ingredients:

  • 3/4 tsp Instant yeast
  • ¼ – ⅓ cup warm water ( add more if required)
  • 1 tsp sugar
  • 2 cups all purpose flour
  • ½ cup yogurt
  • 2 tbsp oil or butter ( ghee)
  • 1 tsp salt

Recipe:

Into a bowl, add in the warm water and sugar and let the sugar dissolve. Sprinkle the yeast over the water and leave it to sit for 10 minutes or until it starts to froth up.

Then into a mixing bowl, add in the flour and salt. Mix and make a pit in the center and add in the activated yeast mixture, yogurt and melted ghee.

Mix it all well and knead until properly combined and the dough forms a dough ball. Then grease a bowl with some oil and place the dough in it and cover with a cloth. Leave it for 2 hours to sit until it rises to double its size.

Then, roll into small balls. Place a ball on a lightly-floured work surface, flatten with your hand.

Rub a cast iron skillet with a very light coat of oil. Place a naan dough in the skillet and cook for 1 to 1 1/2 minutes until the underside is deep golden. Flip then cook the other side for 1 minute until the bubbles become deep golden brown.

Then make it into small sized balls and flatten into triangular shapes. In a greased cast-iron or other heavy skillet, cook paratha over medium heat until lightly browned, about 1-2 minutes on each side. Serve warm.

Ingredients:

  • 4 cups all purpose flour
  • 5 fl oz warm milk
  • 5 fl oz warm water
  • 1 packet dry yeast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 handful fresh herbs

Recipe:

Into a mixing bowl, add in the flour, yeast and the salt. Add warm water, milk, oil and mix it in until smooth dough forms. Cover the dough and let it sit for 30 minutes to rest before making the parathas. Add oil on the dough, cover the bowl and set it in a warm place for an hour.

When the dough is done rising, cut it into 6 and roll each piece into a ball. Roll a piece of dough into a round flatbread and cook in the pan for around 2-3 minutes on each side. Repeat with the remaining flatbreads. Brush your cooked flatbread with a little olive oil and sprinkle fresh herbs on top.
